Gluten Free & Dairy Free
Note: I filled an entire cookie sheet with this recipe, and The crust is very thick. I would half this recipe when I make it again.
3 1/2 Cups Pamela’s Gluten-free flour
1/2 Cup Sugar
2 Tbsp Xanthan Gum
1 tsp Salt
1/2 Cup Olive Oil
1 Cup Coconut Milk
1/2 Cup Water
Combine the wet ingredients in the bread-maker pan. Combine the dry ingredients ontop of we ingredients.
Put the bread-maker pan in the bread-maker and select the dough cycle.
When the dough is done, roll out onto greased tinfoil cookie sheet.
Cook at 350 degrees F for about 15 minutes, until crust is golden brown.
Then take out of the oven and add your tomato sauce, toppings and dairy-free cheese.
Cooking the pizza crust prior to adding toppings is the only way I have found it comes out crispy.
I love that for this recipe I put everything in the bread maker and let it do the heavy lifting. I come back, roll the dough out, and bake it. Voila, pizza.
We smoked our pizza on our Traeger BBQ and it was absolutely amazing.
This is a great recipe for those times you want pizza, and want something tastier than an expensive frozen pizza.
