Gluten Free & Dairy Free
Makes 12 muffins
4 Ripe Bananas
1 Cup Sugar
1/3 Cup Oil
2 Cups Sifted Pamela’s Gluten-Free Flour
2 tsp Baking Soda
Mash the bananas in a large mixing bowl with a potato masher.
Add the rest of the ingredients and mix together with a wooden spoon. Be sure to not over mix.
Use an ice cream scoop to measure out batter and placing in lined muffin cups.
Bake at 350 degrees for 15 minutes or until cooked.
Using a potato masher creates moist, fluffy muffins
I absolutely love banana bread, and these muffins are banana bread to go.
I started making this recipe as a child, and I always found it wasn’t right. So I added another banana and started mashing it with a potato masher. And BAM, amazing.
